Tyrone BT76 0BZ Telephone: 028 8554 8216 Fax: 028 8554 9531 Email: Web: JOB DESCRIPTION Job title: Commis Chef (Pastry) Reporting to: Head Pastry Chef Overall purpose of the job: To prepare and deliver high quality deserts and pastry items in a busy restaurant and function kitchen. Also be able to undertake a varied list of food preparation for the kitchen on a daily basis. The right attitude and skills will make a big difference to our overall food offering, helping us to continuously improve our reputation. Key activities: Ensuring that the production, preparation and presentation of food are of the highest quality at all times. Ensuring and controlling levels of guest satisfaction, quality, and operations within set food costs on an ongoing basis. To set and maintain standards of food preparation and service commensurate with the standing of the hotel by regularly inspecting perishable food items for quality and quantity and ensuring that personal grooming and appearance standards are met regarding cleanliness, sanitation and hygiene. To ensure the department is operated within the appropriate legislation and the appropriate records are maintained up-to-date, including health & safety, hygiene, equal opportunities, HACCP and any other legislation as appropriate. Also ensuring that all policies and procedures laid down by management are implemented. Carry out any other duties as required by management. Tyrone BT76 0BZ Telephone: 028 8554 8216 Fax: 028 8554 9531 Email: Web: PERSON SPECIFICATION Job Title: Commis Chef (Pastry) Criteria Essential Desirable Qualifications/ Attainments NVQ in professional cookery (City & Guilds or Equivalent) Relevant Experience Successful candidate must have at least 1 years experience cooking in a busy kitchen Knowledge of legal requirement for health and safety, HACCP environmental health Skills and competencies -Good communication skills. - Responsible for cleanliness, stock control, organisation and standards of the pastry section Relevant certifications for courses on legislative requirements.
